Meyer Lemon Ricotta Muffins

Complete with lemon glaze!! If I make these again I'll try the glaze with 'regular' lemon for a little more bite. Still really good, though.

As I bake more and more, I'm starting to notice certain properties-- such as moist-ness, density and texture-- vary widely with ingredients and mixing time. I'm beginning to think I want to methodically isolate and document exactly which GF flours do what. Stay tuned for baking experiments...
